Nothing as good as wild blackberry jam (easy instructions)

This is one of our favorites every year. Pick wild blackberries and make jam, the flavor seems so much more intense. Here are our (added) pectin free instructions:

After picking blackberries rinse and let drain, be certain to pick out any debris.

  • Mix washed blackberries with sugar and lemon, this will take a little testing to see how much you like. You can add sugar later in the process, this sugar is added to start the maceration process.

  • Cover in a food grade non-reactive container (glass or plastic) and let rest in refrigerator overnight.

  • Add into high sided pot with a large bottom and cook. We use our 20 quart stock pot for this. As it cooks can splatter and splash and it is hot.

  • We cook until there are large bubbles and we can feel the air forming on the bottom, also as we stir can see the bottom. Add sugar as desired.

  • When the constancy is right, put in jars and process.

  • Feel free to email with questions, may take a couple of tries to get just right. Once you do you can use this method for most fruits.
